Chimichurri

Chimichurri (Smooth Blender Version)

Ingredients

  • 2 cups fresh parsley, loosely packed (about 55–60 g)
  • Zest of 1 lemon
  • Juice of ½ lemon (about 1 tbsp / 15 g)
  • 2 large garlic cloves (about 8 g)
  • ½ shallot, roughly chopped (about 20 g / ~2 tbsp)
  • 1 tsp Chef Dust – The Original (about 3 g)
  • 2 tsp sherry vinegar (about 10 g)
  • 1 tbsp olive oil (about 15 g)
  • ½ tsp kosher salt (about 3 g)
  • ¼ tsp black pepper (about 1 g)

Method

  1. Add all ingredients to a small blender.
  2. Blend until completely smooth.
  3. Taste and adjust salt or acid if needed.
